This Colombian decaffeinated coffee comes from Caldas, a key region within Colombia’s Coffee Triangle, renowned for producing high-quality Arabica coffee. Grown by small-scale farmers at an altitude of approximately 1,850 meters, this coffee benefits from volcanic soils and ideal climatic conditions that enhance its sweetness and complexity.
What makes this coffee unique is its sugar cane decaffeination process, which preserves the original flavor profile while removing the caffeine. Unlike traditional methods, this process maintains the coffee’s clarity, body, and natural sweetness.

This coffee is composed of the Caturra and Castillo varieties, widely cultivated in Colombia for their balance of quality and disease resistance. After selective hand-picking, the cherries are processed using the washed method to ensure a clean and bright cup profile.
Once dried, the coffee undergoes the sugar cane decaffeination process (EA) in Colombia. The beans are first steamed to open their structure and then washed with naturally derived ethyl acetate, obtained from the fermentation of sugar cane, which removes the caffeine while preserving the coffee’s flavor compounds.
The beans are then dried again to stabilize them. This method is recognized for producing some of the finest specialty decaffeinated coffees, maintaining sweetness, body, and aromatic complexity.
