Description

Marcala, in the La Paz region of Honduras, is one of the country’s most renowned specialty coffee origins and holds a Protected Designation of Origin (PDO). This coffee is produced by smallholder Lenca farmers who cultivate coffee on family-owned farms located between 1,200 and 1,650 meters above sea level. These high-altitude conditions, combined with rich soils and a stable climate, allow the cherries to mature slowly, developing balanced sweetness and a well-defined structure.

Coffee production in this region is deeply rooted in tradition, with careful handpicking during harvest and a strong commitment to quality. The result is a clean and approachable cup profile that reflects both the terroir and the dedication of its producers. Expect a well-balanced Honduran specialty coffee with notes of chocolate, green grape, and a creamy texture, ideal for everyday enjoyment.

Process

This coffee is valued in Honduras for its resilience and consistency in the cup. The cherries are selectively handpicked at peak ripeness, ensuring proper sugar development and clarity in the flavor profile.

After harvesting, the coffee is depulped and fermented in water tanks for 12 to 24 hours, depending on environmental conditions. This washed process enhances cleanliness and definition in the cup. The beans are then washed with clean water and dried on patios or raised beds for 10 to 15 days, with regular turning to ensure even drying.
