Huila is widely recognized for offering ideal conditions for coffee cultivation, not only because of its soil and climate, but also due to the commitment and dedication of its producers. Coffee farming in Huila is predominantly small-scale. In fact, approximately 80% of producers cultivate coffee on farms smaller than 3 hectares.
These small farms are family-run, where external labor is rarely hired. This allows for more careful and detailed management, as well as a strong sense of pride in the final product, which represents an extension of the family itself. The region is made up of independent producers with a forward-looking vision and a strong focus on producing high-quality coffee.
Pergamino, our export partner in Colombia, currently works with various producers in Huila, with farms ranging from 1 to 3 hectares. One of these farms is Finca El Mirador, the origin of this lot.
This lot features the Pink Bourbon variety and undergoes a traditional washed processing method. Once the coffee cherries reach peak ripeness, they are carefully handpicked and transported to the wet mill located on the farm.
The following day, the cherries are depulped to remove the outer fruit layer. The beans are then thoroughly washed to eliminate any remaining mucilage before being evenly spread across covered patios to dry.
The cooler climate allows for a slower, more controlled drying process, helping to preserve the coffee’s quality and character. Once the beans achieve the ideal moisture content, they are bagged and sent to Pergamino’s dry mill in Medellín, where they are hulled and prepared for export.
