How to brew coffee with Chemex
Brewing coffee with a Chemex requires attention to a few key details to achieve a clean and balanced cup.
The grind size should be medium-coarse, similar to coarse salt—avoiding too fine (over-extraction) or too coarse (under-extraction).
As a starting point, you can use a 1:10 ratio (1 g of coffee per 10 ml of water), adjusting it to your preference.
Water temperature should be between 90 and 96 °C, and total brew time typically ranges from 3 to 5 minutes.
Basic process
Start by placing and rinsing the filter with hot water to remove any paper taste and preheat the brewer. Add the coffee and perform the initial bloom by pouring twice the amount of water as coffee, letting it rest for 30 seconds.
Continue pouring the water slowly in circular motions, in intervals (pulse pouring), avoiding the filter walls to ensure even extraction.
